Red Snapper adds chapter to Samui’s fine dining book E-mail

THE popular Red Snapper Bar & Grill Restaurant is writing a new chapter in fine dining on Samui with its new menu launched on Sept. 1. The menus’s creator is the talented French executive chef, Sebastien Meunier.

Dedicated to his profession, Sebastien had worked in different renowned restaurants and hotels in his native country including two Michelin Star restaurants. His credentials in the food industry include the CAP Cuisine, BEP Cuisine and Brevet Professionel Cuisine.

Last Sept. 19 the Chaweng Regent Beach Resort, operator of the Red Snapper, hosted the annual Red Snapper Dinner where some of the new Mediterranean dishes created by Sebastien were served.

Sebastien said the new menu “is a bit trendier. There are plenty of new dishes with different horizons of flavors, yet still keeping the Mediterranean influence.”

The new starters were exceptional, especially the Smoked Salmon and Snapper Aïoli.  A particularly creative new main entrée is the White Snapper Gremolata and the Slow-cooked New Zealand Lamb Shank with Moroccan spices and chops.  For fanciers of char-grilled food, there’s a huge section. The “Wickedly Tempting Desserts” menu includes White Chocolate Panacotta with coconut treat and a Crème Brule infused with red chili.
Sebastien said that although he is in charge of the Red Snapper restaurant, chef Dam is in charge of the Chaweng Regent Resort’s Chomtalay Restaurant, which serves Thai food. Recently the owners opened a sister resort, Melatie Resort, in Bophut, and Sebastien said they have a beautiful venue with chef Aurelio creating special dishes.
Sebastien reported that there are menu specials twice a month, offering an extensive pallet of choices. He says, “We are working with only really fresh and high-quality products. Our staff is consistently trained to keep to the same high standards so that guests can enjoy their time with us to the maximum.”

Red Snapper offers many choices of where to sit. There is a 20-seat terrace, shielded from the road by a virtual jungle of flora, allowing diners to view passersby, who don’t see you as they stroll past the terrace. Inside the 60-seat climate-controlled restaurant are beautifully designed and furnished dining areas with comfy sofas set amid attractive sculptured wicker pillars with lots of flowering plants in huge pots. They have discreet lighting, flagstone flooring and beautiful table accoutrements.

A great lounge area features daily performances of the in-house Colombian band, which keeps everyone entertained from 9 p.m. until 1 a.m. (the restaurant is open from 5 p.m. to 2 a.m.).

The Snapper’s award-winning bartender is always ready to surprise guests with his own specially created cocktails.
